Technically there is nothing "wrong" with the eggs at the grocery. Fresh eggs are just better. Here's why:
Fresh is Best.
Eggs take 2- 3 weeks from the time they are laid to reach the shelf at the grocery store. I have read that commercial eggs can be several months old before you buy them....yuck! Farm eggs are fresh - from the chicken to you. No down time!
Our eggs are wiped down with a damp cloth and stored until delivery day. Fresh eggs do not need to be refrigerated - they can be stored on the counter at room temperature (under 75 degrees) for up to three weeks.
Commercial eggs are chemically cleaned. Egg shells are porous, when the natural protective enzymes are stripped from the shell, bacteria has a way inside - gross!
Crack an egg from the grocery and crack a farm fresh egg. The difference is clear. The yolk in our eggs are brighter, richer and usually bigger with less "white". They taste better - richer!
Better for you.
Farm raised chickens have a much better life than commercially raised chickens who are keep in a crate with little room to move or even turn around. They enjoy little to no natural light and eat only the basic feed that most likely contains antibiotics and yolk yellowing chemicals.
Our girls free range all day. They spend most of their time eating bugs, grass and wandering around the farm as they please. This produces a healthier egg, dense in nutrients. Farm eggs have 1/3 less cholesterol, 1/4 less saturated fat, 2/3 more vitamin A, two times more omega 3 fatty acids, three times more vitamin E and seven times more beta carotene.
Shell Color & Size.
We raise several different breeds. Our eggs vary in color from reddish-brown to easter-blue. The difference in shell color has no impact on taste. Some are just prettier than others. Blue eggs are my favorite! This Spring we plan to add a few Olive Eggers to the flock. (So excited!)
As a hen grows her eggs get bigger and become less erratic in size. Some days we have teeny tiny eggs and some days we have giant hand sized creations with double yolks! Everyday we have happy, healthy, hormone and antibiotic free eggs - you can too! (I'm happy to make local deliveries)
